Campus Recreation is offering monthly ready-to-go meal kits starting in September.

The Wellness Kitchen is offering ready-to-go meal kits on the first Monday of each month. The “Meal Kit Mondays” service includes everything needed to prepare dinner in under an hour.

Participants provide only the tools, cooking spray and some minor chopping/mixing/baking to complete the meal. Each meal costs $15 and serves four. Upcoming meal options include:

Sept. 10 (pre-order by Sept. 7) — Roasted chickpea gyros; whole grain pesto pasta casserole; or coconut crusted chicken strips with vegetables.

Oct. 1 (pre-order by Sept. 28) — Veggie and black bean tortilla bake; pork chop and veggies sheet pan dinner; or Tuscan chicken stew.

Nov. 5 (pre-order by Nov. 2) — Coconut curry; Cuban ham and bean soup with cilantro lime rice; or margarita chicken.

Dec. 3 (pre-order by Nov. 30) — Vegetable soup; Italian sausage and kale baked ziti; or green chile chicken breasts with vegetables.

The difference between Meal Kit Mondays and other meal services is the low cost at less than $4 per serving. Additionally, three entree options are available each month and participants may order one, two or all three meals and multiples of the same meal.

Participants can pre-order and pay for meals online. The ready-to-go meals will be available for pick up at the Recreation and Wellness Center between 4:30 and 5:30 p.m. on a select Monday of the month.
